Toledo’s Mexican Grill moves to new location

One of Mustang’s prominent restaurants has officially moved locations within town.

On Aug. 23, Toledo’s Mexican Grill opened for business at 1200 N Mustang Road just across the
street from Mustang Town Center. The business made the move from its former location
behind Luigiano’s on State Highway 152 and has been hard at work preparing the venue.

Part of that was the creation of a large mural inside the building. Manuel Toledo, one of the
restaurant’s owners, said a local Oklahoma City artist came in and has done the artwork the
restaurant features.

“She’s doing our artwork, and she’s doing a great job,” Toledo said. “She’s not done yet, but it’s
a work in progress. She’s getting to it.”

Part of the move came down to a desire for the owners to keep the restaurant in city limits, and
when the Mustang Road venue was available, Toledo’s Mexican Grill pounced at the chance.
The theme for the art is also clear.

“We wanted to give it the Mexican style of those old ghost town cities,” Toledo said. “That’s
what we go for because it’s more like a feminine touch to Mexico in all the flowers and the
colors and stuff like that. So, that’s what we were going for.”

As for the building, Toledo said the extra space is a plus for the business, but also adds extra
work keeping up with the demand. He said the restaurant has to hire all new workers and have
them go through training.

At the old location, Toledo said 27 people were on staff. He said an estimated need for the
restaurant now is closer to 50 employees. Toledo said the restaurant is hiring every position
including Managers, servers, bar tenders, hosts and busboys.

Once situated, the restaurant will allow for people to rent out the banquet room and offer
more reservations that are possible with the extra space.

Toledo said for now the group is still getting used to the building.

“We’re excited, but we’re still getting used to the building,” Toledo said. “…We’re trying to fill
in our staff and get used to the new location because this is our first attempt at a big
restaurant. We’re trying really hard to keep up.”

Toledo’s is open from 11 a.m. until 9 p.m. most days. On Sunday, the business is open from 11
a.m. until 8 p.m.
