A popular Mexican restaurant from Stillwater and Joplin, Missouri is coming to Mustang. Palomino’s, an authentic Mexican restaurant, has broke ground at 1404 East State Highway 152. It will be located just south of the Silver Stallion.

The restaurant will be over 4,000 square feet with a dinning room, small bar and several TVs throughout the building.

“This one, unlike the one I built in Joplin, is going to have a drive-thru on it. Thanks to COVID-19 it’s more convenient having the drive-thru. It’s great food. It will be more authentic Mexican,” said general contractor Trace Hawke.

Palomino’s will be a full service family restaurant that seats up to 85 people. The owner decided to build in the Mustang area with all the growth happening.

“It’s a very fast growing town. The household income is high and I thought it was a good spot for a restaurant. I didn’t see many full service restaurants and I think it’s a good town for a business,” said Palomino’s Owner Jose Villasemor.

They plan to offer a large menu and describe the food kind of like Tex-Mex.

“We have traditional street tacos, fish, steaks, fajitas, and several burritos. Most all our dishes come with rice and beans. We also serve margaritas, imported and domestic beers,” said Villasemor.

The restaurant will offer complimentary chips, salsa and cheese sauce.

“People love it. People here in Stillwater love our cheese sauce. We also have sopapillas, delicious cakes, churros and Mexican custard,” he said.

They hope to have the restaurant up and running before Christmas.

“We’re going to hire local people. We’re going to try to do our best to serve the community and be good neighbors,” said Villasemor.
